“Buriring in August: A Culinary Adventure,” was a partnership of the city governments of Cadiz and Sagay and the municipal government of Manapla and was held last August 8, 2014 at the Don Bernardo Benedicto Community Center in Cadiz City.
“Buriring” is a small pufferfish and is one of the delicacies in this northern part of Negros Occidental, a seashore city, which is about 65 kilometers from Bacolod City. Buriring appears here in the month of July and August. These are the month considered the “happiest” months for fishing boats catching these pufferfishes. During these months, this small pufferfish is not poisonous.
Buriring are being caught in the waters of the Visayan Sea particularly in Bantayan Island, Cebu. Along with these pufferfish, fishermen would only catch fish locally known as “tuloy”, because they go to appear together.
Buriring Festival was spearheaded by Sagay City Councilor Matthew Gamboa, he said: “The purpose of the buriring festival is to introduce this unique and flavorful delicacy to people from other places and erase all doubts that this fish is toxic.”
Ten cooks from Cadiz and Sagay cooked 170 kilos of buriring with various takes and twists. Aside from the traditional ones like with libas leaves, santol and other spices, other cooks used coconut milk, pineapple, malunggay, butter, kamias, guava leaves, pineapple and lemon grass leaves.
Representative Leo Rafael Cueva said this is one way to promote what is unique in the Second District – and no other exotic dish can be this unique as buriring. He said this is also to help promote tourism in the district.
